Eating raw food diet is not a new habit. It has been around for more than a century. The idea of eating raw foods only is beginning to catch on lately because of the raw diet benefits. A raw food diet is one where a person does not eat food that has been heated over a certain temperature, typically 115 F. However, this temperature ranges depending on whom you talk to and what type of food you eat. The idea is that heating over this temperature kills important enzymes and vitamins, making the food less healthy for you.

Eating cooked foods kills enzymes and vitamins. The big question is how many vitamins and nutrients are destroyed? According to raw food advocates, cooking destroys or alters most enzymes and many of the vitamins in foods. The result is that it takes longer to digest and slows down the digestion system. Enzymes help digest food, and without the enzymes, it takes more food to get nutrition. Raw food also allows people to absorb food properly.
